Heat olive oil in a large sauté pan over medium-high heat. Add chicken pieces in a single layer without overcrowding the pan, cooking for 8-10 minutes while stirring occasionally until fully cooked. Remove from heat and cover to keep warm.

Preheat a skillet to medium heat. Lightly spray each side of the tortillas with cooking spray and warm each side for about one minute. Transfer to a plate and repeat with remaining tortillas.
