Quick, creamy spaghetti tossed with seasoned beef, tangy tomatoes, and melty cheese. Family favorite comfort meal.

# What You’ll Need:

→ Main Ingredients

01 - 1 pound lean ground beef
02 - 1 medium yellow onion, diced
03 - 2 cups tomato sauce (about one 15-ounce can)
04 - 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
05 - 1/2 cup sour cream
06 - 2 tablespoons taco seasoning
07 - 1 teaspoon hot sauce, or to taste
08 - 12 ounces dry spaghetti
09 - 1 1/2 cups Colby Jack cheese, shredded

→ Optional Toppings

10 - 2 green onions, sliced
11 - 1/4 cup sliced black olives
12 - 1 medium tomato, diced
13 - 1/2 cup crushed tortilla chips
14 - Pickled jalapeño slices, to taste
15 - Shredded lettuce, as desired

# Steps to Make This:

01 - In a large skillet over medium heat, cook ground beef until beginning to brown, about 3-4 minutes. Add the diced onion and sauté together until the beef is fully browned and the onions are translucent, another 2-3 minutes. Drain excess fat if necessary.
02 - Stir in the tomato sauce, undrained Rotel tomatoes with chilies, sour cream, taco seasoning, and hot sauce. Mix thoroughly and bring to a simmer. Reduce heat to low and cook, uncovered, for 10 minutes to allow flavors to meld.
03 - While the sauce simmers, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente, about 8-9 minutes. Drain well.
04 - Add drained spaghetti to the skillet with the meat sauce. Toss thoroughly until all pasta strands are coated evenly with sauce.
05 - Sprinkle shredded Colby Jack cheese over the spaghetti mixture and stir gently until the cheese is melted and creamy, about 1-2 minutes.
06 - Transfer to serving plates and top with your choice of green onions, olives, diced tomato, crushed tortilla chips, pickled jalapeños, or shredded lettuce. Serve immediately.

# Additional Notes:

01 - Use mild or original Rotel to adjust spice levels to your preference.
02 - Slightly undercook pasta to keep texture firm after mixing with the sauce.
03 - Meal is suitable for advance meal prep and reheats well for leftovers.
04 - Drain the beef well to avoid a greasy sauce.
