01 - 1 lb large shrimp, peeled and deveined

02 - 2 tablespoons salted butter, divided
03 - 2 tablespoons taco seasoning
04 - 1/2 teaspoon kosher salt

05 - 1/2 cup sour cream or Greek yogurt
06 - 1 garlic clove, minced
07 - 1 small shallot, finely chopped
08 - 1 jalapeño, seeded and chopped
09 - 1/4 cup fresh cilantro leaves
10 - 1 teaspoon lime zest
11 - 2 tablespoons fresh lime juice
12 - 2 tablespoons olive oil

13 - 3 cups tri-color coleslaw mix

→ Tortillas

14 - 6 small flour tortillas

# Steps to Make This:

01 - Rinse shrimp and pat dry thoroughly with paper towels.
02 - Melt 1 tablespoon salted butter and combine with taco seasoning in a large bowl.
03 - Add shrimp to seasoned butter mixture and toss until each piece is evenly coated.
04 - Combine sour cream, garlic, shallot, jalapeño, cilantro, salt, lime zest, lime juice, and olive oil in a food processor. Blend until smooth, about 30 seconds.
05 - Divide sauce in half; toss one half with coleslaw mix until fully coated. Reserve remaining sauce for serving.
06 - Heat remaining butter in a large skillet over medium-high heat. Add seasoned shrimp and cook 4 to 5 minutes, turning occasionally, until shrimp are opaque and cooked through.
07 - Warm tortillas, fill each with a portion of coleslaw and approximately 3 shrimp. Drizzle reserved sauce over the top and serve immediately.
