Old-Fashioned Dirty Rice (Printer-Friendly)

01 - 1 cup long grain white rice

03 - 1/4 cup water

05 - 150 grams lean ground beef
06 - 90 grams chicken gizzards, chopped (optional)

07 - 1/2 cup green bell pepper, diced
08 - 1/2 cup sweet onion, diced
09 - 2 cloves garlic, minced
10 - 2 tablespoons green onions, chopped

→ Spices and Seasonings

11 - 1/2 teaspoon celery seed
12 - 1 tablespoon Creole seasoning
13 - 1/2 teaspoon onion powder
14 - 1/4 teaspoon cayenne pepper
15 - 1/4 teaspoon ground black pepper

# Steps to Make This:

01 - Rinse rice thoroughly under cold water until the water runs clear to remove excess starch. Place rice and beef broth into a saucepan, bring to a boil, then cover and reduce heat to simmer for 20 minutes.
02 - Heat canola oil in a 12-inch skillet over medium heat. Add ground beef, optional chicken gizzards, diced green bell pepper, diced onion, and minced garlic. Sauté for 8 to 10 minutes until meats are cooked through and vegetables are tender.
03 - Add the cooked rice, celery seed, Creole seasoning, onion powder, cayenne pepper, black pepper, and water to the skillet. Stir thoroughly and continue heating until flavors meld and mixture is heated through.
04 - Remove from heat and garnish with chopped green onions. Serve immediately.

# Additional Notes:

01 - Rinsing the rice removes starch that causes gumminess, ensuring each grain cooks separately.
02 - If omitting chicken gizzards, ground sausage or andouille sausage are excellent substitutes.
03 - Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
