# What You’ll Need:

→ Main Ingredients

01 - 1 pound beef kielbasa, sliced into 1/4-inch rounds
02 - 1 1/2 pounds Yukon gold or russet potatoes, peeled and diced into 1/2-inch cubes
03 - 2 green bell peppers, cut into 1-inch pieces
04 - 1 large red onion, sliced into 1-inch pieces

→ Seasonings

05 - 3 tablespoons extra virgin olive oil
06 - 1 teaspoon kosher salt
07 - 1/2 teaspoon ground black pepper
08 - 1 teaspoon garlic powder
09 - 1 teaspoon smoked paprika

→ Finish & Garnish

10 - 1/4 cup Buffalo Wild Wings Asian Zing sauce, or barbecue sauce
11 - 2 green onions, thinly sliced for garnish
12 - Nonstick cooking spray, for sheet pan

# Steps to Make This:

01 - Slice kielbasa into 1/4-inch rounds. Chop green bell peppers and red onion into 1-inch pieces. Peel and dice potatoes into 1/2-inch cubes for even roasting.
02 - Place diced potatoes in a large mixing bowl. Drizzle with 2 tablespoons olive oil, sprinkle with salt, black pepper, garlic powder, and smoked paprika. Toss thoroughly to coat all sides.
03 - Add green bell peppers and red onion to the seasoned potatoes. Drizzle with remaining 1 tablespoon olive oil, add a light sprinkle of additional seasonings if desired, and toss until evenly mixed.
04 - Coat a large rimmed baking sheet with nonstick cooking spray. Spread the potato and vegetable mixture in an even layer. Distribute kielbasa slices evenly over the top.
05 - Place sheet pan in the oven preheated to 400°F (204°C). Roast for 30 minutes, then check potatoes for tenderness. Continue roasting up to 40 minutes, until vegetables are caramelized and sausage is browned.
06 - Remove pan from oven. Drizzle Asian Zing sauce or barbecue sauce over hot ingredients just before serving. Garnish with chopped green onions and serve directly from the pan.

# Additional Notes:

01 - Cut potatoes slightly smaller than the other vegetables to ensure even roasting and faster cooking.
02 - Toss all ingredients thoroughly in oil and seasonings before roasting for best flavor and texture.
03 - For lighter cleanup, line your sheet pan with parchment paper or foil.
04 - Change up the dish by swapping in sweet potatoes, zucchini, or carrots, and try turkey or chicken sausage for a lighter option.
05 - Leftovers keep well in an airtight container in the refrigerator for up to 3 days, and reheat best in the oven at 375°F (190°C).
06 - For parties, chop ingredients smaller and serve with toothpicks as an appetizer.
