Preheat oven to 350°F. Line a baking sheet with parchment paper.

In a large mixing bowl, mash ripe bananas until smooth using a fork or potato masher.

Add quick oats to the mashed bananas and stir thoroughly to combine into a uniform dough.

Fold in chocolate chips, nut butter, cinnamon, or honey, if using, until evenly distributed.

Using a spoon, scoop the dough onto the prepared baking sheet, forming approximately 16 cookies. Flatten each cookie to desired thickness with the back of a spoon or damp fingertips, as dough will not spread during baking.

Bake in the preheated oven for 12–15 minutes or until the cookies are set and lightly golden at the edges.

Remove from oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container.
