Breakfast Cookies Healthy Two Ingredients (Printer-Friendly)

Wholesome banana oat cookies for breakfast on-the-go. Simple, two-ingredient, low fat, and quick to make.

# What You’ll Need:

→ Base

01 - 2 medium ripe bananas, mashed
02 - 1 3/4 cups quick oats

→ Optional Additions

03 - 1/4 cup dark chocolate chips
04 - 1 tablespoon peanut flour or any nut butter
05 - 1/2 teaspoon ground cinnamon
06 - 1 tablespoon honey

# Steps to Make This:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper.
02 - In a large mixing bowl, mash ripe bananas until smooth using a fork or potato masher.
03 - Add quick oats to the mashed bananas and stir thoroughly to combine into a uniform dough.
04 - Fold in chocolate chips, nut butter, cinnamon, or honey, if using, until evenly distributed.
05 - Using a spoon, scoop the dough onto the prepared baking sheet, forming approximately 16 cookies. Flatten each cookie to desired thickness with the back of a spoon or damp fingertips, as dough will not spread during baking.
06 - Bake in the preheated oven for 12–15 minutes or until the cookies are set and lightly golden at the edges.
07 - Remove from oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container.

# Additional Notes:

01 - For best results, use spotty, overripe bananas to maximize natural sweetness and binding.
02 - Cookies do not spread in the oven, so shape as desired before baking.
