Grilled Italian Lemon Garlic (Printer-Friendly)

Juicy chicken grilled with bright lemon, garlic, and herbs for a tasty and light dish.

# What You’ll Need:

→ Marinade

01 - 1/4 cup olive oil
02 - 3 tablespoons seasoned rice vinegar
03 - 3 cloves fresh garlic, minced
04 - 1 teaspoon dried oregano
05 - 1 teaspoon dried rosemary
06 - 1/4 teaspoon red pepper flakes (optional)
07 - 1/2 teaspoon kosher salt
08 - 1/4 teaspoon ground black pepper
09 - 1 lemon, thinly sliced and juiced

→ Main

10 - 4 boneless, skinless chicken breasts (about 170 grams each)

# Steps to Make This:

01 - Combine olive oil, seasoned rice vinegar, minced garlic, oregano, rosemary, optional red pepper flakes, salt, pepper, lemon juice, and lemon slices in a resealable plastic bag. Seal and shake to mix thoroughly.
02 - Add chicken breasts to the bag, remove excess air, and massage the marinade into the meat evenly. Refrigerate for at least 2 hours to let flavors infuse and tenderize the chicken.
03 - Preheat grill to medium-high heat (approximately 350°F). Clean grill grates to prevent sticking.
04 - Place marinated chicken breasts on the grill, discard leftover marinade. Position lemon slices on the upper grill rack or on foil beside the chicken to gently heat them for garnish.
05 - Close the grill lid and cook chicken breasts for 6-8 minutes per side, or until internal temperature reaches 165°F using a meat thermometer.
06 - Remove chicken and lemon slices from grill. Serve immediately, optionally topping chicken with grilled lemon slices for presentation.

# Additional Notes:

01 - Marinating for at least 2 hours enhances flavor penetration and tenderness; a minimum of 30 minutes is acceptable in a pinch but less effective.
02 - Cooked chicken can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
