In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Whisk until smooth and fully combined.

Pour wet ingredients into the bowl with the dry ingredients. Gently fold until just combined; do not overmix. A few small lumps are acceptable.

Heat a non-stick frying pan over medium heat. Lightly grease with butter or oil. Using a 1/4 cup measuring cup, pour batter onto the pan. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook an additional 1–2 minutes, until golden brown and cooked through.
