01 - 4 medium flour tortillas

02 - 450 grams (1 lb) ground beef, 80-85% lean
03 - 1 teaspoon kosher salt
04 - 1/2 teaspoon freshly ground black pepper
05 - 1/2 teaspoon paprika
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon onion powder

→ Cheese

08 - 115 grams (1 cup) shredded cheddar cheese or cheddar blend

→ Burger Sauce

09 - 3 tablespoons mayonnaise
10 - 1 tablespoon ketchup
11 - 2 teaspoons pickle juice
12 - 2 tablespoons finely chopped pickles
13 - 1/4 teaspoon ground black pepper
14 - 1/4 teaspoon paprika

→ Optional Toppings

15 - Pickles, sliced
16 - 1 medium tomato, sliced

# Steps to Make This:

01 - In a small bowl, combine mayonnaise, ketchup, pickle juice, chopped pickles, black pepper, and paprika. Whisk until smooth and creamy.
02 - Heat a large skillet over medium-high heat. Add ground beef and break apart with a spatula. Cook until browned and no longer pink, about 6 minutes. Season with salt, black pepper, paprika, garlic powder, and onion powder. Drain excess fat.
03 - Lay tortillas flat. Evenly spoon cooked beef over half of each tortilla. Sprinkle with shredded cheese. Add optional pickles or tomato slices if desired. Fold tortillas in half, pressing gently to seal.
04 - Heat a dry skillet over medium heat. Place folded quesadillas in the skillet and cook until golden and crisp on one side, about 3-4 minutes. Flip and cook the other side until cheese melts and tortillas are golden.
