Crock Pot Sausage Peppers (Printer-Friendly)

Tender Italian sausage paired with sautéed peppers and onions, slow cooked for deep, comforting flavor.

# What You’ll Need:

→ Meat

01 - 1 lb Italian sweet sausage links
02 - 2 tbsp unsalted butter

→ Vegetables

03 - 1 large green bell pepper, sliced
04 - 1 large red bell pepper, sliced
05 - 1 large onion, sliced

→ Sauces and Seasonings

06 - 2 cups marinara sauce
07 - 1 tbsp tomato paste
08 - 1 tsp garlic powder
09 - 1 tbsp Italian seasoning
10 - Salt, to taste
11 - Black pepper, to taste

# Steps to Make This:

01 - Slice green and red bell peppers along with the onion into thin strips and place them in the slow cooker.
02 - Sprinkle garlic powder, Italian seasoning, salt, and black pepper over the sliced vegetables. Pour marinara sauce and tomato paste on top, then stir gently to combine.
03 - Cover and cook on low heat in the slow cooker for 2 hours, stirring occasionally to ensure even cooking.
04 - In a skillet, melt butter over medium heat. Add sausage links and sear until browned on all sides, about 5-7 minutes. This step is optional but enhances flavor.
05 - Add the browned sausages to the slow cooker with the vegetables. Cover and cook on low for an additional 4 hours, stirring every hour carefully to avoid breaking the sausages.
06 - Remove sausages if desired and slice them. Return to the slow cooker, stir gently, and serve hot either on their own, over pasta, or on sandwich buns as preferred.

# Additional Notes:

01 - Leftovers can be stored airtight in the refrigerator for up to 5 days or frozen for up to 3 months.
02 - Oven alternative: Bake sausage and vegetables at 400°F for 25-35 minutes, tossing halfway through.
03 - Serve with sides such as mac and cheese, grilled vegetables, or fried potatoes for a complete meal.
