Bold Cajun spiced chicken with creamy cheese and sweet corn on toasted buns for a hearty meal.

# What You’ll Need:

→ Protein

01 - 1 pound ground chicken

→ Vegetables

02 - 150 grams canned sweet corn, drained
03 - 1/2 cup diced red onions (about 80 grams)

→ Sauce and Seasonings

04 - 1 can (10.5 oz) condensed cream of chicken soup
05 - 1 tablespoon Cajun seasoning
06 - 1 teaspoon onion powder
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 3 tablespoons mayonnaise

→ Cheese

10 - 1/2 cup shredded mozzarella cheese (about 56 grams)
11 - 1/2 cup shredded cheddar cheese (about 56 grams)

→ Bread

12 - 4 sturdy hamburger buns

# Steps to Make This:

01 - Arrange hamburger buns in a single layer on a baking sheet, ready for toasting just before serving to maintain crispness.
02 - Heat a large sauté pan over medium-high heat. Add ground chicken, breaking it up and cooking until no pink remains and some browning appears, about 7-8 minutes.
03 - Add drained corn and diced red onions to the chicken. Stir and cook for 3 minutes until onions are translucent and corn is lightly toasted.
04 - Reduce heat to low. Stir in cream of chicken soup, Cajun seasoning, onion powder, salt, and black pepper. Mix thoroughly to create a thick, creamy sauce coating the mixture.
05 - Remove from heat or keep on very low heat. Stir in mayonnaise gently until combined to achieve a silky texture without boiling.
06 - Place buns in a preheated oven at 400°F (204°C) for 4-5 minutes until lightly browned and crisp.
07 - Spoon warm chicken mixture onto bottom buns. Top each with shredded mozzarella and cheddar blend. Cover with top buns and serve immediately to enjoy melted cheese.

# Additional Notes:

01 - Toast buns just before assembling to maintain optimal texture and prevent sogginess.
