# What You’ll Need:

→ Fritter Batter

01 - 2 cups shredded zucchini (1–2 medium zucchini), excess moisture removed
02 - 1 large egg
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon baking powder
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon Italian seasoning
08 - 1/4 teaspoon red chili flakes
09 - 1/3 cup all-purpose flour

→ For Cooking

10 - Olive oil or non-stick cooking spray

# Steps to Make This:

01 - Grate zucchini using the large holes of a box grater or food processor. Transfer to a clean kitchen towel, cheesecloth, or several layers of strong paper towel and squeeze out as much excess moisture as possible.
02 - In a medium bowl, combine drained zucchini, egg, salt, baking powder, garlic powder, onion powder, Italian seasoning, red chili flakes, and all-purpose flour. Mix thoroughly until the batter is evenly blended.
03 - Form the mixture into 9 to 10 small patties of equal size, pressing lightly to compact.
04 - Preheat air fryer to 350°F for 2 to 5 minutes, according to manufacturer’s instructions.
05 - Optional: Line air fryer basket with parchment paper or foil for easier cleanup. Place zucchini patties in a single layer in the preheated basket, leaving space around each to ensure proper air circulation.
06 - Lightly brush or spray fritters with olive oil. Air fry at 350°F for 10 minutes.
07 - Using a spatula, gently flip each fritter. Apply another light coat of oil or cooking spray and cook an additional 5 minutes, or until deeply golden and crisp.
08 - Transfer hot fritters to a serving plate and enjoy immediately, optionally paired with your preferred dipping sauce.

# Additional Notes:

01 - For maximum crispiness, thoroughly remove as much moisture as possible from zucchini before mixing with other ingredients.
02 - Allow space between fritters in the air fryer; cook in batches if necessary to avoid overcrowding.
03 - Leftover fritters can be stored in an airtight container in the refrigerator for 3–5 days or frozen for up to 2 months.
04 - Reheat fritters in the air fryer for best texture; avoid microwave reheating to prevent sogginess.
05 - Line air fryer basket with parchment paper or foil for easy cleanup.
