Pat shrimp dry with paper towels. Place in mixing bowl and drizzle with olive or avocado oil. Add garlic powder, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Toss until evenly coated.

Set air fryer to 400°F and preheat for 3 minutes. Lightly spray basket with cooking spray if needed to prevent sticking.

Arrange shrimp in a single layer in air fryer basket; cook in batches if necessary. Air fry for 6 to 8 minutes, shaking or flipping halfway through, until shrimp are pink, curled, and edges are lightly crisp. Remove and squeeze fresh lemon juice over shrimp.

In a small bowl, whisk together Greek yogurt or mayonnaise, ketchup, Dijon mustard, garlic powder, lemon juice, and paprika. Chill until serving.

Serve shrimp hot with optional dipping sauce, over salads, inside tacos, or alongside rice. Garnish with parsley, green onion, or lemon wedges if desired.
